Let's start by saying that everything is thoroughly washed and sanitized. Our staff has strict instructions regarding hand sanitization, which has become an even more careful practice following anti-COVID procedures. They also wash vegetables and - something you rarely find in restaurants - wash egg shells! Yes, that's right: every single egg is washed to ensure that any bacteria or impurities don't end up in the food when the egg is cracked.

Want some ice? It's safe here!

It may seem trivial, but it's not at all! The ice is made with tap water, and here in Sal, it's desalinated water. The bacteria load in this water could cause intestinal problems for those who are not accustomed to it or who are more sensitive. That's why even travel sites often suggest not putting ice in drinks.

Well, if you're at LobSTAR you don't run any risk because our ice is produced with a machine that - as a first step - purifies the water eliminating any type of microorganisms present, including the dreaded bacteria. So, come and have a drink and... cheers!

All the fresh fish you find in LobSTAR dishes is treated by our Good Food Lab according to strict HACCP (Hazard Analysis and Critical Control Points) procedures.

The fish is filleted, portioned, vacuum-packed and blast-frozen in an extremely short time. This system guarantees the wholesomeness of the meat, especially in large fish such as tuna and serra. But it doesn't end there. All this would be of little use without what happens next...

Labeling and Cold Chain

These two aspects of Food Safety are fundamental. All food that is stored, i.e. not immediately consumed, must be labeled with the processing date: in this way, the use of fresh food with its intact organoleptic properties is always guaranteed. But it is also necessary to guarantee correct storage, even if only for one day. This is why our strict “cold chain” procedures can continue to ensure the wholesomeness of every ingredient you find in your dish at LobSTAR.

Daily Cleaning and Scheduled Maintenance

Cleaning is fundamental, of course. But we also talk about cleaning electrical equipment. On an island as windy and exposed to salt as this, electrical equipment needs very special care. That's why we have made our own a famous TV slogan: “Better Safe than Sorry!”. Of course. All our equipment is periodically maintained to guarantee its perfect functioning. Think about refrigerators and cold rooms: if they didn't work properly, we couldn't guarantee the wholesomeness of the food contained in them, right?

And if there was a power outage or water shortage? Here in Sal it happens, sometimes.
No worries and no interruption of important equipment: we have powerful generators and large water tanks. This is also safety. Trust us!

Last but not least: training!

We have written many times that we have procedures to follow, that we follow strict rules, that we apply precise methods. All true. And to do this we dedicate time to teaching our employees everything they need to know. Training is an ongoing activity that is divided into theoretical training and practical training on all key topics. Even for maintenance, our technician attends refresher courses abroad to be able to intervene on even the most innovative equipment.
