Mauro Loi
Executive Chef
Mauro has been our Executive Chef since 2019 and oversees a wide range of organizational and operational tasks. He coordinates and supervises the entire kitchen staff, training new hires and ensuring an efficient work environment. He is responsible for creating new menus, selecting ingredients, and developing recipes. Mauro constantly monitors the quality of the dishes prepared and the ingredients used. He is actively involved in selecting suppliers and sourcing raw materials. He also collaborates with the front-of-house staff to ensure impeccable service.

Mauro comes from a family of pastry chefs. He has built a solid foundation by attending the most prestigious culinary and pastry schools, both in Italy and abroad, such as Etoile Academy, Cast Alimenti by Iginio Massari, and the French École Lenôtre. He has honed his skills as a chef in 5-star hotels and restaurants around the world. He served as Executive Chef for a major Italo-Libyan catering company with over 1,000 employees, providing services to embassies, oil platforms, and drilling sites, even in war zones. He has also shared his passion as a proud Culinary and Pastry Arts instructor for the beloved Sardinia region.
