Mauro Loi
Executive Chef

Mauro has been our Executive Chef since 2019 and oversees a wide range of organizational and operational tasks. He coordinates and supervises the entire kitchen staff, training new hires and ensuring an efficient work environment. He is responsible for creating new menus, selecting ingredients, and developing recipes. Mauro constantly monitors the quality of the dishes prepared and the ingredients used. He is actively involved in selecting suppliers and sourcing raw materials. He also collaborates with the front-of-house staff to ensure impeccable service.

Mauro comes from a family of pastry chefs. He has built a solid foundation by attending the most prestigious culinary and pastry schools, both in Italy and abroad, such as Etoile Academy, Cast Alimenti by Iginio Massari, and the French École Lenôtre. He has honed his skills as a chef in 5-star hotels and restaurants around the world. He served as Executive Chef for a major Italo-Libyan catering company with over 1,000 employees, providing services to embassies, oil platforms, and drilling sites, even in war zones. He has also shared his passion as a proud Culinary and Pastry Arts instructor for the beloved Sardinia region.

Stephanie Rocha Lopes da Costa
Administrative and HR Manager

Stephanie is a recent addition to our team but brings with her extensive professional experience. She holds a degree in Business Administration from the University of Cape Verde (ULCV) and has specialized training in Human Resources Administration. She is also proficient in English. Her professional journey began in customer-facing roles at prominent hotels on the island, followed by a position as a front office agent at a major telecommunications provider. Over the years, she has honed her skills as an HR Assistant and as an administrator in the Security Department of two large tourist resorts. She has also worked as a project technician related to entrepreneurship at the Municipality of Sal. Stephanie considers herself to be proactive, communicative, and eager to contribute to and create value for the company. We are delighted to have her on board.

Marketing and Communication Manager

Oscar has been working with us since 2017 and is responsible for everything related to the PalmBeach image: from developing marketing plans to creating this website, from designing the graphics you see in the restaurant to creating all types of advertising. Oscar has been active in the field of Marketing and Business Communication for over twenty-five years, boasting a wealth of experience that has allowed him to study, analyze, and acquire methods, systems, and mechanisms for effective communication. In 2019, he founded the Win Win Advertising brand and brought his expertise to the island of Sal, where he saw the opportunity to offer advanced services for a future of growth in terms of needs and quality, also in terms of image and communication.
