The extra virgin olive oil we use in our kitchen and that you'll find on the LobSTAR table is produced by a historic mill in Bisceglie (Italy) that, since 1910, has been pressing olives to obtain something truly special for the palate. Italian Tomatoes from a Short Supply Chain

It’s important to make a distinction: we purchase fresh tomatoes here in Sal, of course. And they are a good product. But even so, the ancient tradition of tomato cultivation in Italy and their rich, incomparable flavor have led us to seek out an excellent Italian producer. And we found it.

The peeled tomatoes used in our kitchen preparations are imported directly from a historic Italian producer. A producer who boasts an extremely short processing chain. In other words, the 100% Italian tomatoes are processed just a few hours after harvesting. This means that the fantastic aromas and all the organoleptic and nutritional characteristics remain practically intact.

We’ll tell you a little more about how our supplier prepares these two special ingredients:
The peeled tomatoes of suitable varieties undergo a rapid pressure blanching, a subsequent mechanical peeling and manual sorting, and are then packaged with the addition of tomato juice; the tomato puree, on the other hand, is the result of the grinding of high-quality tomatoes for subsequent blanching, refining and collection of their juice.

The pasta you enjoy at LobSTAR is artisanal, egg-based, and always fresh, produced in our Good Food Lab. Even in this case, the flours we use come from Italy and are the best on the market. Our supplier began milling grain as early as 1831 and their acquired expertise has made them the leading Italian group for the milling of soft wheat. A guarantee of quality!

We source a number of raw materials locally.
All fresh produce, such as fruits, vegetables, and eggs, is purchased daily, sanitized, and prepared in our Good Food Lab. We even wash each egg individually to ensure it's completely clean. In addition to the fish and shellfish caught in this ocean, we purchase local specialties like Goat Cheese and Papaya Honey (from Santo Antão), the three varieties of Cha de Fogo (wine produced on the island of Fogo), and much more.
